The Sweet Spot.

We’re about to be transported, angels, via the presence of my special guest today, on a delicious tropical journey through Asia to the golden-sand beaches of Queensland, Australia.  This is where Lisa Wiedrich calls home when she and her children are not exploring Laos, Vietnam, Cambodia, and the local market foods they offer.  At home, she grows jerusalem artichokes, limes, nasturtiums to give even the simplest dishes a taste of her oriental travels.

 

Lisa, how did your passion for food develop?

I have always loved food and cooking. I was raised in the backs of kitchens and worked in commercial cookery in my early 20ʼs, finding my niche in pastry and cakes. Lucky I was also aware of health and nutrition and the impact my choices had on the
planet at large, and from early on
favoured organic produce.  With a diploma in Travel, these 2 two passions combine rather well…. traveling and eating!

Do your children share your taste for the exotic?

Well… my daughter has a persistent and dominant sweet tooth!  This ice-cream is something I make for them, Iʼm always trying to invent recipes or search for healthy options that satisfy their taste buds but will add some nutritional value.

And you see your evolution with food and travel as…

A life changing event a few years ago thrust me into my spiritual journey which has been one hell of a ride so far-  fabulous, challenging and one I am so extremely grateful for.  SoulFood Journey was born… The life unfolding in front of me is beautiful as are the people that I seem to be attracting into this new chapter.

 

 

Pineapple Coconut Icecream

1 whole pineapple – skin removed and cuts into ʻchunksʼ
1 small can coconut cream – around 200-250ml
3 tbls of Sucanat*
A few sprigs of mint

Blend all ingredients until smooth and then transfer to an Ice-cream machine (if you have
one) and churn for about an hour. If you donʼt have an ice-cream machine, youʼll just need
to pull it out of the freezer and and ʻmashʼ it with a fork occassionally. This breaks down
the ice particles and makes it creamier.
Voila! Done!
Itʼs dairy free, low in sugar, full of fabulous nutrients and delicious….. and so quick and
easy!!

 

If you donʼt need it dairy free – add some organic cream – makes it a bit more decadent.

* Sucanat is a natural non refined cane sugar that has not had the molasses removed,
pretty much just dried pure sugar cane juice.

 

Adults-only version… add some white rum and blend it for a summertime cocktail, says Lisa! :)
